A lemon a day keeps the doctor away! From digestion aid to wrinkle fighter, Lemon is one of those super foods with a myriad health and cosmetic benefits.
I squeeze lemon in my water, sprinkle it over my salad and add it to my veggie juice and for this recipe I mixed it into my yogurt. It’s an easy thing to add to your routine, little effort big results
Greek yogurt makes a good snack, especially when sweetened with honey. It’s a healthy and satisfying treat that will keep you slim!
I had this for breakfast the other day and I might serve it as a dessert next
Mix the honey an lemon juice into the yogurt. Top it of with sliced kiwi, strawberry and shredded mint leaves.

Who wants a rich and creamy dessert? I do! Especially when I know that what I’m eating is good for me! I’m all about indulging without bulging
I just saved us from a lot of fat calories by not using heavy whip cream in this (vegan) dessert! The creamy texture is the result of chia seeds soaked in light coconut milk, which makes this dessert high in omega 3 and dietary fiber and low in calories.
When I first poured the light coconut milk in a bowl I wasn’t sure how this was going to become a pudding because it’s so much thinner than regular coconut milk. But to my surprise (after an hour) the seeds absorbed a lot of the milk and it changed the consistency completely.
I layered the pudding with banana and coconut shredding but you can pick any fruit you like. I’m thinking of trying raspberries next!

My friend Krysten Jorgensen from the blog “The Daily Kale” is going to share some of her delicious vegan recipes with MDE on Vegan Fridays! She created “ The Daily Kale” initially for her mom who lives on the other side of the country but her healthy recipes and tips inspire many others including me.
Krysten explains: I became very interested with health, when I realized that my family history (health wise) is not a good one. And at the rate I was going, drinking soda, eating fast food, etc. I would’ve continued that history. I realized that just because my family’s health history is not the best one- it does NOT mean that has to be mine. I’m not destined to have heart problems, diabetes, bad cholesterol, etc. I can change all of these things and I change it with food! Because it all starts there; “Let food be thy medicine“.
This brownie recipe is raw and vegan, I made it yesterday and boy it’s ridiculously good! I had friends over for dinner and we all went for seconds and added a scoop of vanilla ice cream with some cinnamon! It feels SO good knowing that these brownies are nutritious too; You’re mainly eating nuts, dates, avocado and cacao powder! You don’t actually taste the avocado, it creates the mousse-like consistency.
First: Put all the ingredients for the crust in a food processor and when it’s really fine place the mixture in a cake form or dish. Press onto the mixture with a flat spoon or your fingers until it feels solid and make an even surface.
Second: Put all the ingredients for the icing in a food processor and when it’s smooth spoon it onto the crust.
(I put it in the freezer for a while to make it more firm; easier to cut squares out of it)

When I work on new recipes my goal is to create the most delicious and nutritious meals, snacks and desserts.
I challenge myself to only use ingredients that empower my body and that whatever I create has to taste equal or better when compared to the less healthy or even unhealthy version.
I never compromise on flavor; the Raw Mango Cheesecake is a good example of that.
Instead of whipping up cream cheese, butter and sugar to make a traditional cheesecake I use fruit, nuts and agave nectar.
This “healthy” cheesecake is a favorite among my friends and when I tell them what’s in it they can hardly believe it. When I see them enjoy their guilt-free dessert with a smile on their face, I know I’ve achieved my goal
Indulge without the bulge!
Cut the mango cheesecake in small pieces. let it thaw completely (+/- 20 min.) and serve. It’s a dense cake, a small piece will fill you up!
Look what I found in my fruit basket this morning!
This exotic fruit is known to grow in the dark. When ripe, this fruit has to be harvested early in the morning before the little birds sneak into the fields to get their fix.

I was having so much fun in the kitchen last night rolling these chocolate delights. After a night in the fridge to harden, the first thing I wanted to know when I woke up was how my Goji berry/raisin coconut chocolate balls turned out? I walked straight from my bed to the fridge and OMG it’s seriously ridiculous how delicious these are. My mouth starts watering again just by writing about it. I think these chocolate “fruit” balls are a great fit for a homemade fruit basket but I might not categorize them as breakfast……although I’d love to
